Pineapple Rice (साखरभात)

Pineapple Rice

Pineapple Rice (अननसाचा साखरभात) is a delicious sweet rich flavored with fresh cut pineapples. Suitable for packing along during your long trips, kids lunch or even special parties.

Ingredients

  • 2 cups Basmati Rice
  • 1 cup Fresh pineapple pieces
  • 1 1/2 cup Sugar
  • 3 tablespoon Ghee
  • Freshly grated coconut
  • 4-5 cloves (लवंग)
  • 1 tsp cardamom powder (वेलची)
  • Saffron (केशर)
  • Cashews/Almonds(optional)

Recipe

  1. Take 1 1/2 cup of water in a small pot and cook the freshly cut pineapples for 5 minutes without covering the pot
  2. Soak 2 cups of Basmati rice in water for about 20 minutes, wash the rice and then drain all the water
  3. Put ghee in a thick bottom pan and turn the heat to medium
  4. When the ghee melts and becomes hot, put 4-5 cloves and then add the rice to the pan
  5. Fry the rice for about 2-3 minutes in the ghee and the add 3 cups of boiled water
  6. Add a pinch of turmeric and pinch of salt, cover the pan and let it cook for 7 minutes. Occasionally check to make sure that all the water is not evaporated
  7. Yellow food color is sometimes used to color the rice, but I prefer turmeric powder and saffron instead

  8. Add freshly grated coconut and the hot water from the pot of pineapples to the rice
  9. Fully cook the rice and then add sugar, pineapple pieces, cardamom powder and saffron while the rice is hot and stir it well
  10. On a very low flame, cook the rice for about 2 minutes
  11. Garnish with cashews and almonds of your choice
